Have you ever heard of quinoa? It’s a delicious plant grown for its edible seeds, which have a nutty taste and awesome texture. It’s super easy to make, following a similar procedure to cooking rice. My new routine is to come home from work and make some quinoa and sauté whatever vegetables I have in the fridge. Today I used: baby squash, okra, spinach, kale, green peppers and garlic. After sautéing them with olive oil/butter/s+p (besides the leafy greens…I put those in raw), I added the quinoa and topped it off with feta cheese. Needless to say, it was very tasty and I recommend it to anyone looking for a quick, but delicious meal to fight fatigue!
